To make roasted garlic add olive oil and whole garlic to a sauce pot and cook on medium heat for roughly 30-40 minutes or until soft and golden brown. Strain oil and puree the garlic. Reserve oil for other recipes.
In a mixing bowl add all ingredients including the pureed garlic and make sure it is seasoned very well with salt and pepper. DO NOT add the non-stick spray.
Use the non-stick spray on a half sheet pan and pour the potatoes mixture onto the pan and spread evenly. Bake on 350 degrees for 50-60 minutes uncovered. Serve hot.
